About This Recipe

A creamy frozen dessert inspired by Greek flavors, made with heavy cream, fresh raspberries, lemon zest, and pistachios. Keto-friendly and naturally gluten-free.

This frozen dessert draws on flavors of the Aegean region, where lemons, pistachios, and berries have been staples for centuries. Greek-style frozen desserts trace back to ancient times, when mountain snow was mixed with honey and fruit.

Ingredients

  • 2 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 1/2 cup erythritol
  • 2 lemon, zested
  • 1 tsp vanilla extract
  • 2 cup fresh raspberries, divided
  • 2 tbsp lemon juice
  • 1/4 cup pistachios, chopped

Instructions

  1. 1

In a large mixing bowl, combine the heavy whipping cream and unsweetened almond milk. Whisk until well combined.

  2. 2

Add erythritol, lemon zest, and vanilla extract to the mixture, stirring until the sweetener has fully dissolved.

  3. 3

Fold in half of the raspberries, gently mashing them to release their juices, and mix until well combined.

  4. 4

Pour the mixture into a shallow dish and freeze for 2 hours or until semi-firm.

  5. 5

Once semi-frozen, remove from the freezer and use an ice cream scoop to form rounded balls of the frozen delight.

  6. 6

Place the formed balls onto a parchment-lined tray and return to the freezer while preparing the raspberry sauce.

  7. 7

In a blender, combine the remaining raspberries, lemon juice, and erythritol. Blend until smooth.

  8. 8

Strain the sauce through a fine mesh sieve to remove seeds and set aside.

  9. 9

Remove the frozen delight balls from the freezer and drizzle each with raspberry sauce.

  10. 10

Sprinkle chopped pistachios over the top, serving immediately.
