A paleo-friendly take on classic Greek baklava, replacing filo pastry with a pressed nut crust of almonds, pecans, and walnuts soaked in a warm honey-lemon-spice syrup.

Baklava is a traditional Greek dessert made with layers of filo pastry, nuts, and sweet syrup. This Paleo version uses nuts instead of filo pastry to create a healthier option without compromising on flavor.

Ingredients

  • 3 1/2 oz raw almonds
  • 3 1/2 oz pecans
  • 3 1/2 oz walnuts
  • 4 tbsp melted butter or coconut oil
  • 2 cup honey
  • 1 lemon, juiced
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • pinch salt

Instructions

    Preheat oven to 350°F (175°C). Grease a 9×13 inch (23x33cm) baking dish.

    In a food processor, pulse the almonds, pecans, and walnuts until they resemble coarse crumbs. Set aside.

    In a small saucepan, combine honey, lemon juice, cinnamon, cloves, and salt. Heat over medium heat, stirring occasionally, until fully combined. Remove from heat and let cool.

    Gently press half of the nut mixture into the bottom of the prepared baking dish, creating an even layer. Drizzle with half of the melted butter or coconut oil.

    Pour half of the honey syrup over the nut layer.

    Sprinkle the remaining nut mixture on top and drizzle with the rest of the melted butter or coconut oil.

    Pour the remaining honey syrup over the top nut layer.

    Bake for 30-35 minutes, or until golden brown and fragrant. Remove from oven and let cool completely.

    Once cooled, cut into small squares and serve.

Chef's Notes

This dessert is best enjoyed at room temperature to fully appreciate the flavors and textures.

Plating Tips

Dust the bites lightly with ground cinnamon and arrange on a serving platter. A drizzle of extra honey and a few crushed pistachios on top add color and visual appeal.
