A creamy Greek-inspired frozen dessert made with a lemon custard base, vanilla ice cream, and crumbled meringue cookies. Light and tangy, it is a refreshing finish to any meal.
This dessert is inspired by Greece's love for lemon and honey, and pays homage to their traditional sweets and pastries.
Ingredients
- 2 cup milk, whole
- 1 cup heavy cream
- 3/4 cup sugar
- 1/4 tsp salt
- 3 egg yolks, large
- 1/2 cup lemon juice, freshly squeezed
- 1 cup Greek meringue cookies, crumbled
- 2 cup vanilla ice cream, softened

In a saucepan over medium heat, combine milk, heavy cream, sugar, and salt. Stir until the sugar dissolves completely.

In a separate bowl, whisk together egg yolks. Slowly pour about half of the warm milk mixture into the egg yolks, stirring constantly.

Return the tempered yolk mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (approximately 5-7 minutes).

Remove from heat and strain into a large bowl. Stir in lemon juice until well combined. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.

Once chilled, remove from refrigerator and mix in crumbled Greek meringue cookies and softened vanilla ice cream until well combined.

Transfer the mixture into an ice cream maker and process according to the manufacturer's instructions.

Transfer the frozen treat to a lidded container and freeze for at least 4 hours or overnight.
Chef's Notes
The meringue cookies can be replaced with crushed graham crackers or biscuits for a different texture.

Serve in chilled bowls with a curl of lemon zest and a small whole meringue cookie on top for garnish.
