About This Recipe

A light, herb-forward mocktail with cucumber, mint, and citrus, inspired by the bright flavors of the Mediterranean. Sweetened with stevia, it works well for keto and low-carb diets.

This mocktail draws on the bright, herbaceous flavors common in Greek and Mediterranean cuisine — cucumber, mint, and citrus are staples of the region. It has been adapted with a keto-friendly sweetener to keep carbs minimal.

Ingredients

  • 2 cup sparkling water
  • 1 cup cucumber, sliced
  • 1/2 cup mint leaves, fresh
  • 1/4 cup lime juice, freshly squeezed
  • 1/4 cup lemon juice, freshly squeezed
  • 3 tbsp stevia powder
  • ice cubes

Instructions

  1. 1

In a blender, combine the cucumber slices and mint leaves. Blend until smooth.

  2. 2

Strain the mixture through a fine mesh strainer into a large pitcher, pressing with a spoon to extract as much liquid as possible. Discard the solids.

  3. 3

Add the sparkling water, lime juice, lemon juice, and stevia powder to the pitcher. Stir well to combine.

  4. 4

Taste and adjust sweetness if needed.

  5. 5

Refrigerate for at least 1 hour to allow the flavors to meld.

  6. 6

Pour over ice cubes into glasses and serve chilled.
