No-bake energy bites made with almonds, Medjool dates, and orange zest, rolled in shredded coconut. A naturally sweet treat that comes together quickly in a food processor.
This recipe takes inspiration from traditional Italian almond-based desserts.
Ingredients
- 2 cup almonds, soaked and drained
- 1 cup Medjool dates, pitted
- 1 tbsp orange zest, from 1 large orange
- 3 tbsp orange juice
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 1/2 cup shredded coconut, for rolling

Soak the almonds for 2 hours, then drain and pat dry.

In a food processor, combine almonds, dates, orange zest, cinnamon, vanilla, and salt. Pulse until well mixed.

Add orange juice one tablespoon at a time until the dough becomes sticky enough to form balls.
