A layered parfait of diced tropical fruits, coconut cream, and an almond-coconut crumble. Light, refreshing, and naturally Paleo-friendly.
This recipe is inspired by Hawaiian cuisine, which often features tropical fruits and coconuts, staples of the island's bountiful harvest.
Ingredients
- 2 cup mixed tropical fruits (pineapple, mango, kiwi, strawberries), diced
- 1 cup coconut cream
- 1 cup almonds, finely chopped
- 1/4 cup unsweetened shredded coconut
- 1 tbsp honey
- 1 tsp vanilla extract

In a small bowl, combine almonds and shredded coconut. Add honey, vanilla extract, and pinch of salt. Mix well and set aside for 10 minutes to let the flavors meld.

Prepare your tropical fruit salad by dicing the pineapple, mango, kiwi, and strawberries into small cubes. Set aside.

Begin assembling the parfaits by spooning a layer of coconut cream at the bottom of each serving glass.

Add a generous layer of tropical fruit salad on top of the coconut cream layer.

Sprinkle almond-coconut crumble over the fruit layer, pressing gently to secure it in place.
