1. 2 cups coconut milk 2. 1 cup unsweetened almond milk 3. 1/4 cup monk fruit sweetener 4. 1 tbsp vanilla extract 5. 1 cup frozen pineapple chunks 6. 1 cup frozen mango chunks 7. 1/2 cup macadamia nuts, chopped 8. 2 tbsp lilikoi (passionfruit) juice 9. Ice cubes, as needed
Instructions
Combine coconut milk, almond milk, monk fruit sweetener, and vanilla extract in a blender. Blend until smooth. Add frozen pineapple and mango chunks, lilikoi juice, and half of the chopped macadamia nuts into the blender. Blend until creamy and thick. Taste for sweetness and adjust if needed. Pour mixture into a freezer safe container and freeze for 2 hours or until it reaches a soft serve consistency. Just before serving, break up any ice crystals and mix in the remaining chopped macadamia nuts. Scoop the Aloha Blizzard into two tall glasses or dessert bowls.
