Ingredients

  • 6 large eggs, separated
  • 1/2 cup raw honey
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut flour
  • 1/4 cup almond meal
  • 1/2 cup açaí berry powder
  • 1/2 cup passion fruit pulp
  • 1 cup full
  • fat coconut milk
  • 2 cups strong brewed coffee, cooled

Instructions

  1. Preheat oven to 350°F (175°C). Grease and dust with cocoa a 9 inch springform pan. In a large bowl, beat together egg yolks, honey, salt, coconut flour, almond meal, açaí berry powder, and half of the passion fruit pulp until smooth.
  2. In another bowl, whip the egg whites to stiff peaks. Fold the egg whites into the yolk mixture gently but thoroughly. Pour the batter into the prepared pan.
  3. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
  4. In a separate bowl, whisk together the remaining passion fruit pulp and coconut milk. Once the cake has cooled, pierce it all over with a fork and pour the passion fruit coconut mixture evenly over the top. Cover and refrigerate for at least 6 hours or overnight to let flavors meld.
  5. Before serving, whip the remaining egg whites to soft peaks and fold in sea salt. Slice the cake into individual servings and dust each with a pinch of the whipped egg whites for an ethereal finish.
