Eggs, Tree Nuts (Almond Meal)
Ingredients
- 6 large eggs, separated
- 1/2 cup raw honey
- 1/4 teaspoon sea salt
- 1/4 cup coconut flour
- 1/4 cup almond meal
- 1/2 cup açaí berry powder
- 1/2 cup passion fruit pulp
- 1 cup full
- fat coconut milk
- 2 cups strong brewed coffee, cooled
Instructions
- Preheat oven to 350°F (175°C). Grease and dust with cocoa a 9 inch springform pan. In a large bowl, beat together egg yolks, honey, salt, coconut flour, almond meal, açaí berry powder, and half of the passion fruit pulp until smooth.
- In another bowl, whip the egg whites to stiff peaks. Fold the egg whites into the yolk mixture gently but thoroughly. Pour the batter into the prepared pan.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
- In a separate bowl, whisk together the remaining passion fruit pulp and coconut milk. Once the cake has cooled, pierce it all over with a fork and pour the passion fruit coconut mixture evenly over the top. Cover and refrigerate for at least 6 hours or overnight to let flavors meld.
- Before serving, whip the remaining egg whites to soft peaks and fold in sea salt. Slice the cake into individual servings and dust each with a pinch of the whipped egg whites for an ethereal finish.
