American Summer Citrus Revitalizer
About This Recipe
A refreshing green juice blending spinach, kale, and celery with bright orange and grapefruit segments, thinned with coconut water. Light, hydrating, and packed with vitamins.
The combination of citrus fruits and green vegetables in this recipe draws on the American tradition of fresh juice blends that became popular with the health-food movement of the 1970s and remain a staple at juice bars nationwide.

- 4 cup fresh spinach
- 2 cup kale, de-stemmed
- 1 cup cucumber, peeled and chopped
- 1 cup celery, chopped
- 3 oranges, peeled and segmented
- 2 grapefruits, peeled and segmented
- 1 cup coconut water
Instructions
- 1
In a large blender, combine the spinach, kale, cucumber, and celery. Blend until smooth.
- 2
Add the orange and grapefruit segments to the blender. Continue blending until the mixture is fully combined and smooth.
- 3
Slowly pour in the coconut water while blending until you reach your desired consistency.
- 4
Strain through a fine-mesh sieve if you prefer a smoother juice, or serve as-is for more fiber.
Chef's Notes
For a thinner juice, add more coconut water or plain water. Serve immediately for the best flavor and nutrient retention, or refrigerate in an airtight container for up to 24 hours.
Plating Tips
Serve in a tall glass over ice with a thin orange wheel on the rim and a sprig of fresh mint.
