A colorful vegan smoothie made with frozen berries, banana, spinach, and avocado. Chia and flax add fiber and healthy fats for a filling breakfast or snack.
The smoothie has its roots in the 1930s when Steve Boorin invented the "Banana Boat" at the Café Royal in New Orleans, blending fruit, ice cream, and milk together for a frozen treat. Since then, the concept of blending fruits and other ingredients into a drinkable form has evolved into the myriad of smoothies we know today.
Ingredients
- 2 cup mixed frozen berries (strawberries, blueberries, raspberries)
- 1 banana, peeled and sliced
- 1 cup baby spinach leaves
- 1/2 medium avocado, pitted and peeled
- 1 cup almond milk, unsweetened
- 2 tbsp chia seeds
- 1 tbsp ground flaxseeds
- 1 tbsp maple syrup (optional)
Instructions

Add the frozen berries, sliced banana, baby spinach, avocado, almond milk, chia seeds, and ground flaxseeds to a blender.

Blend on high until smooth and creamy, about 1 minute. Scrape down the sides if needed and blend again.

Taste and add maple syrup if you prefer a sweeter smoothie. Blend briefly to combine.

Pour into glasses and serve immediately.
Chef's Notes
Feel free to adjust the sweetness of the smoothie according to your preference. You can also add ice if you prefer a thicker, more slushy texture.
Plating Tips
Top each glass with a few fresh berries, a sprinkle of chia seeds, and a small sprig of mint for color.
