
Apfelstrudel-inspired Vegetarian Vegan Delight

A vegan take on classic Austrian Apfelstrudel, featuring thin pastry dough filled with cinnamon-spiced apples and raisins, deep-fried until golden and dusted with powdered sugar.
Apfelstrudel has its roots in Austria and Germany and is a traditional dessert often served during the Christmas season.
Ingredients
- 2 cup all-purpose flour
- 1/4 cup granulated sugar, organic
- 1 tsp salt
- 1/2 cup cold vegan butter, diced
- 1/2 cup ice water
- 3 medium apples, cored and thinly sliced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 cup raisins, soaked in warm water for 5 minutes
- 2 cup vegetable oil, for frying

In a large bowl, whisk together the flour, sugar, and salt.

Add the cold vegan butter and use your fingers to combine until the mixture resembles coarse meal.

Gradually add ice water, mixing until a soft dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Drain the raisins and mix them with the apples, lemon juice, cinnamon, and a pinch of sugar. Set aside.

Remove the dough from the refrigerator and roll it out on a lightly floured surface to a thin sheet. Cut into four equal portions.
