Instructions
In a small saucepan over low heat, gently warm the almond milk and honey until the honey dissolves completely. Remove from heat and let it cool to room temperature.
In a large mixing glass filled with ice, combine lemon juice, cold water, and cooled almond milk mixture. Add vanilla extract and sea salt, and shake vigorously until well chilled and combined.
Double strain the mixture into a chilled cocktail glass or a tall wine glass filled with fresh ice.
Top with chilled sparkling water, stir gently to combine, and garnish with fresh mint leaves and a lemon twist.
