A Nordic-inspired meringue dessert layered with mixed forest berries, whipped cream, and almond flour for a light, airy treat with balanced sweetness.

Nordic cuisine has long incorporated berries, cream, and nuts in their dishes, creating a rich culinary tradition that celebrates the region's bountiful resources.

Ingredients

  • 2 cup mixed Nordic berries (such as bilberries, blackcurrants, and redcurrants)
  • 1 cup heavy cream
  • 1/4 cup granulated sugar substitute
  • 2 egg whites, large
  • 1/2 cup almond flour
  • 1/4 cup powdered sugar substitute
  • 1 tsp pure vanilla extract

Instructions

    Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

    In a small saucepan, combine the berries and granulated sugar substitute. Cook over medium heat until the mixture begins to thicken, about 10 minutes. Set aside to cool.

    In a large bowl, beat the heavy cream with the powdered sugar substitute and vanilla extract until soft peaks form. Set aside.

    In another large bowl, using a hand mixer or stand mixer, beat the egg whites until stiff peaks form. Gently fold the whipped cream into the egg whites.

    Gradually add the almond flour to the meringue mixture and gently fold in until just combined.

    Spread the berry mixture evenly on top of the prepared parchment paper. Carefully spoon the meringue mixture over the berries, spreading it out into a circle with a slight dip in the center.

    Bake for 25-30 minutes, or until the meringue is slightly golden and firm to the touch. Allow to cool completely before serving.
