
Arctic Forest Berry Elixir

A refreshing Nordic-inspired berry drink made by steeping wild berries in hot water with mint and sugar substitute. Light, fruity, and perfect served ice-cold.
This elixir draws inspiration from the Nordic tradition of foraging wild berries from boreal forests. In Scandinavian countries, berries like lingonberries, blueberries, and cloudberries have been steeped into drinks and tonics for centuries, valued both for their flavor and their high antioxidant content.
Ingredients
- 1 cup frozen mixed wild berries (blueberries, raspberries, blackberries)
- 2 cup boiling water
- 1 tbsp lemon juice
- 2 tbsp sugar substitute (erythritol or xylitol)
- 4 sprigs of fresh mint
- 1 cup ice cubes

In a heatproof bowl, combine frozen mixed wild berries, boiling water, and lemon juice. Allow the mixture to steep for 5 minutes to release the flavors.

Strain the berry-infused water into a saucepan, pressing down on the berries to extract as much flavor as possible. Discard the berries.

Add sugar substitute and fresh mint sprigs to the saucepan, stirring until dissolved. Bring the mixture to a simmer over medium heat for 2 minutes. Remove from heat and let it cool.

Strain the syrup into a glass pitcher, discarding the mint leaves. Chill the syrup in the refrigerator for at least 1 hour.

In two tall glasses, combine half of the chilled berry syrup with half a cup of ice cubes each. Stir gently and serve immediately.
Chef's Notes
This recipe works well on a keto diet and can be easily scaled up for a crowd. For a sparkling version, replace the water with club soda after chilling. Adjust sweetener to taste.
Plating Tips
Serve in clear glasses to showcase the deep berry color. Garnish with a fresh mint sprig and a few whole frozen berries floating on top.
