About This Recipe

A Nordic-inspired parfait layering crisp meringue nests, whipped berry cream, and mixed berries. Light and elegant, with a balance of sweet meringue and tart fruit.

The Arctic Forest Berry Parfait draws inspiration from Nordic traditions that celebrate seasonal ingredients, particularly berries which are abundant during the summer months in the region.

Ingredients

  • 2 cup mixed frozen berries (blueberries, raspberries, blackberries)
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 3 egg whites
  • 3/4 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp water
  • pinch salt

    In a saucepan, heat the mixed frozen berries with 2 tablespoons of water over medium heat until they soften and release their juices. Mash them gently to create a thick, jammy consistency. Allow to cool.

    In a large bowl, whisk together heavy cream, 1/4 cup granulated sugar, and vanilla extract until stiff peaks form. Set aside in the refrigerator.

    Preheat oven to 200°F (93°C). Line a baking sheet with parchment paper.

    In a clean, grease-free bowl, beat egg whites using an electric mixer on low speed until frothy. Increase speed to medium and gradually add powdered sugar. Continue beating until stiff peaks form. Add a pinch of salt.

    Using a piping bag with a large round tip, pipe meringue onto the parchment paper in 12 individual dollops, creating a nest for each parfait. Bake for 30 minutes, or until firm and dry to the touch. Let cool completely on a wire rack.

    To assemble, place two meringue nests into each of four tall glasses. Fill with alternating layers of berry cream and fresh berries. Top with an additional dollop of meringue and garnish with a sprig of mint.
