About This Recipe

A refreshing Nordic-inspired mocktail made with muddled wild berries, apple juice, elderflower cordial, and lemonade. Light and fruity with a floral finish, perfect for warm-weather gatherings.

Wild berries have been an important food source for many Nordic cultures throughout history, and the use of elderflowers is also widespread in these regions.

Ingredients

  • 1 cup wild berries, fresh or frozen (blueberries, raspberries, blackberries)
  • 2 cup apple juice
  • 1/4 cup elderflower cordial
  • 1/2 cup lemonade
  • 4 sprigs of fresh mint
  • ice cubes
  • fresh wild berries and mint leaves, for garnish

Instructions

  1. 1

In a large pitcher, combine the wild berries and apple juice. Muddle gently to release the juices from the berries.

  2. 2

Add the elderflower cordial and lemonade. Stir well to combine.

  3. 3

Divide the fresh mint sprigs among four glasses, gently crushing them in each glass to release their aroma.

  4. 4

Fill each glass with ice cubes, then strain the Arctic Forest Mocktail over the crushed mint leaves.

  5. 5

Garnish with fresh wild berries and a sprig of mint, if desired.

Chef's Notes

The key to the perfect Arctic Forest Mocktail is using fresh and ripe wild berries for optimal flavor.
