  3. In another bowl, beat egg yolks with honey and vanilla extract until smooth. Stir in dulce de leche until well combined.
  4. In a separate bowl, whisk egg whites until stiff peaks form.
  5. Gently fold the egg yolk mixture into the dry ingredients, then gently fold in the egg whites.
  6. Spoon batter into prepared muffin tin, filling each liner about two thirds full. Sprinkle chopped almonds on top of each bite.
  7. Bake for 18 20 minutes or until a toothpick inserted comes out clean.
  8. Allow bites to cool completely in the pan before removing.
