Ingredients
1. 1 lb beef sirloin, cut into 1
inch cubes 2. 4 tablespoons olive oil 3. Salt and pepper, to taste 4. Wooden or metal skewers For the Chimichurri Sauce: 5. 1 cup fresh parsley, chopped 6. 1/4 cup fresh oregano, chopped 7. 2 garlic cloves, minced 8. 1/2 cup olive oil 9. 1/4 cup red wine vinegar 10. Salt and pepper, to taste
Instructions
In a large bowl, combine the beef cubes with 2 tablespoons of olive oil, salt, and pepper. Toss well to coat evenly. Set aside for at least 30 minutes for marination.
While the beef is marinating, prepare the chimichurri sauce. In another bowl, mix together parsley, oregano, garlic, olive oil, red wine vinegar, salt, and pepper. Stir well, then set aside to allow flavors to meld.
Preheat your grill or grill pan to medium high heat. Thread the beef cubes onto skewers, leaving a little space between each piece.
Grill the skewers for about 2 minutes per side, or until desired doneness is reached. Be sure not to overcook!
Remove skewers from grill and let them rest for 3 minutes. Brush generously with chimichurri sauce and serve immediately.
