Ingredients
- 1 cup fresh mixed berries (raspberries, blueberries, blackberries, and strawberries)
- 1 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract

- Crushed pistachios, for garnish
Instructions
- In a large bowl, combine the mixed berries and 2 tablespoons of granulated sugar. Gently toss to coat the berries evenly with the sugar, allowing them to macerate for about 10 minutes.
- Meanwhile, in another large bowl, whip the heavy cream with the remaining 2 tablespoons of granulated sugar and vanilla extract until stiff peaks form. Set aside in the refrigerator.
- To assemble, divide half of the macerated berries among four serving glasses or parfait cups, spooning them into a neat layer at the bottom.
- Next, top each glass with a generous dollop of whipped cream, creating a luscious cap that cascades over the edge of the glass.
- Finish by sprinkling crushed pistachios and garnishing with fresh mint leaves for an elegant touch.
