
Aurora of Berries Delight

A light Scandinavian-inspired parfait layering fresh mixed berries with vanilla whipped cream, topped with crushed pistachios and mint. Simple to assemble and naturally refreshing.
The combination of berries and cream is a traditional Scandinavian pairing, highlighting the abundance of wild berries in the region and the importance of dairy in Nordic cuisine.
Ingredients
- 1 cup fresh mixed berries (raspberries, blueberries, blackberries, and strawberries)
- 1 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- fresh mint leaves, for garnish
- crushed pistachios, for garnish
Instructions

In a medium bowl, toss the mixed berries with 1 tablespoon of granulated sugar. Let them macerate for about 10 minutes.

In a separate bowl, whip the heavy cream with the remaining 1 tablespoon of sugar and the vanilla extract until stiff peaks form. Refrigerate until ready to assemble.

Divide half of the macerated berries among four serving glasses or parfait cups, spooning them into a layer at the bottom.

Top each glass with a generous dollop of whipped cream.

Add the remaining berries on top of the cream.

Finish by sprinkling crushed pistachios over each glass and garnishing with fresh mint leaves.
Chef's Notes
For a lighter version, substitute half the heavy cream with Greek yogurt. The berries can be swapped for any seasonal fruit. Prepare the whipped cream and macerated berries up to a few hours ahead and refrigerate separately.
Plating Tips
Layer in clear glasses or mason jars to show off the berry and cream layers. A light dusting of powdered sugar on top adds a polished finish.
