1. 6 Large pork chorizo sausages 2. 6 Slices of crusty artisan bread (gluten
free if necessary) 3. 3 Ripe avocados, sliced 4. 1 Cup fresh parsley, finely chopped 5. 1/2 Cup extra virgin olive oil 6. 1/4 Cup red wine vinegar 7. 3 Garlic cloves, minced 8. 1 Tbsp dried oregano 9. Salt and pepper to taste 10. 1 Tsp red pepper flakes (optional)
Instructions
Preheat the grill or a grill pan to medium high heat.
In a large bowl, combine parsley, olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper. Set aside.
Grill sausages for about 6 minutes on each side or until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
Toast bread on the grill or in an oven until golden brown.
Slice sausages, place on toasted bread, spoon chimichurri sauce over the top, add avocado slices, and serve immediately.
