  • 1. 2 cups jasmine rice (soaked) 2. 4 oz beef, thinly sliced 3. 1/2 cup mung beans, soaked 4. 1/2 cup chicken broth 5. 2 tablespoons fish sauce 6. 1 tablespoon palm sugar 7. 1 teaspoon tamarind paste 8. 1/2 teaspoon ground black pepper 9. 3 cloves garlic, minced 10. 1 small onion, thinly sliced 11. 1 cup mixed vegetables (e.g., carrots, bell peppers, cucumber) 12. 1/4 cup roasted peanuts, chopped 13. 2 tablespoons fresh cilantro, chopped

Instructions

  1. Cook the soaked jasmine rice according to package instructions. Set aside.
  2. In a pan, heat a small amount of oil and sauté the sliced beef until cooked through. Remove from the pan and set aside.
  3. In the same pan, add garlic, onion, and ground black pepper. Cook until fragrant and onions are translucent.
  4. Add mung beans, chicken broth, fish sauce, palm sugar, tamarind paste, and cooked beef to the pan. Stir well and cook for 5 7 minutes or until mung beans are softened.
  5. Assemble the breakfast bowl by layering cooked rice, cooked mung bean mixture, mixed vegetables, roasted peanuts, and fresh cilantro.
