  2. Peel plantains and slice into 1/2 inch thick rounds. Brush with olive oil and season with salt and pepper. Arrange on the prepared baking sheet, bake for 18 minutes until golden brown and tender, flipping halfway through. Set aside.
  3. In a non stick pan, cook gluten free chorizo sausage over medium heat until browned and crispy, about 5 minutes. Remove from pan, set aside.
  4. In the same pan, cook eggs to preference (sunny side up or over easy).
  5. Assemble: Place a bed of rice on each plate, top with cooked black beans, chorizo sausage, tostones, eggs, avocado slices, and queso blanco cheese. Garnish with fresh cilantro leaves.
