Instructions
a. Heat 2 tablespoons of olive oil in a non stick pan over medium heat. Add the sliced tomatoes and cook for 2 minutes on each side. Season with salt and pepper. b. In another pan, crack the eggs one by one into a separate bowl before gently sliding them into the pan with a little space between each egg. Cook the eggs to your desired preference. c. Season the fried eggs with salt and pepper, then place them on top of the cooked tomatoes in the first pan. d. Sprinkle the crumbled feta cheese over the eggs and tomatoes, followed by the chopped kalamata olives. e. In a small bowl, combine the finely chopped fresh dill and parsley with the remaining olive oil. Drizzle this herb mixture over the dish.
