Instructions

  1. Season the chicken with salt and pepper. In a large skillet, heat 1 tbsp of avocado oil over medium high heat. Cook the chicken until browned on all sides. Remove from the pan and set aside. Add the remaining tablespoon of avocado oil to the pan along with diced onion and minced garlic. Saute until translucent. Stir in tomato puree, smoked paprika, and ground cumin. Cook for 3 4 minutes until the mixture starts to thicken. Pour in bone broth or chicken stock and stir well to combine. Bring the mixture to a simmer. Add the browned chicken back into the pan, ensuring it is submerged in the sauce. Cover and cook for 20 25 minutes, or until the chicken is fully cooked through. Serve over Paleo friendly Jollof Rice and garnish with fresh cilantro.
