  • 2 cups panko breadcrumbs
  • 2 large eggs
  • 1/4 cup Bang Bang Sauce (recipe below)

  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro leaves for garnish Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1/2 tsp garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat a deep fryer or heavy pot with oil to 350°F (175°C).
  2. Set up three shallow bowls one for flour, another for beaten eggs, and the last for panko breadcrumbs.
  3. Dredge shrimp in flour, then egg, and finally coat with breadcrumbs, shaking off excess each time.
  4. Fry shrimp in batches until golden brown and cooked through, about 2 3 minutes. Drain on paper towels.
  5. In a bowl, combine mayonnaise, Sriracha sauce, honey, rice vinegar, garlic, salt, and pepper to make the Bang Bang Sauce.
  6. Heat tortillas in a dry pan or microwave for 10 seconds.
  7. Assemble tacos by placing fried shrimp on tortillas, drizzling with Bang Bang Sauce, adding avocado slices, and garnishing with lime wedges and cilantro leaves.
  8. Serve immediately.
