Instructions

  1. In a large bowl, whisk together brown sugar, apple cider vinegar, ketchup, Worcestershire sauce, paprika, chili powder, garlic powder, onion powder, salt, and black pepper to make the BBQ sauce. Reserve 1 cup for serving.
  2. Place chicken thighs in a large resealable plastic bag or shallow dish, pour remaining BBQ sauce over them, massage it into the chicken, cover, and marinate for at least 30 minutes or up to overnight.
  3. Preheat grill to medium high heat (about 375°F). Remove chicken from marinade, let excess drip off, and place on grill. Grill chicken, turning occasionally, until cooked through (internal temperature reaches 165°F), about 20 minutes.
  4. While the chicken cooks, warm tortillas on the grill for about 30 seconds per side, or in a dry pan over medium heat.
  5. Remove chicken from grill and shred with two forks. Toss with reserved BBQ sauce to coat.
  6. Serve chicken in warm tortillas with desired toppings and extra BBQ sauce on the side.
