Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1

  • 2 cups wood skewers (preferably bamboo) For the Peanut Sauce:
  • 1 cup smooth peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • Water, as needed to thin the sauce

Instructions

  1. In a large bowl, combine chicken pieces with 1 cup of peanut butter, soy sauce, lime juice, honey, garlic, coriander, and cumin. Mix well and let marinate for at least 30 minutes.
  2. Preheat grill to medium high heat or use a grill pan on the stovetop. Thread chicken onto skewers, discarding any remaining marinade.
  3. Grill chicken satay for about 4 5 minutes per side, until fully cooked and charred in places. Remove from grill and let rest for a few minutes.
  4. While chicken is resting, prepare peanut sauce by whisking together remaining cup of peanut butter, soy sauce, lime juice, honey, garlic, coriander, and cumin until smooth and creamy. Thin with water as needed to reach desired consistency.
  5. Serve chicken satay on a platter alongside the peanut sauce for dipping, garnished with chopped cilantro and thinly sliced red chilies.
