Wood chips for grilling (e.g., hickory or mesquite) BBQ Smokehouse Magic Sauce: 1. 2 cups ketchup 2. 1 cup apple cider vinegar 3. 1/2 cup brown sugar 4. 1/4 cup molasses 5. 1/4 cup Worcestershire sauce 6. 2 tbsp yellow mustard 7. 1 tbsp liquid smoke 8. 1 tsp paprika 9. 1/2 tsp garlic powder 10. 1/2 tsp onion powder

Instructions

  1. In a large bowl, mix together the brown sugar, paprika, chili powder, black pepper, garlic powder, onion powder, and cayenne pepper (if using). Rub this dry rub mixture all over the chicken pieces, ensuring they are evenly coated. Let them rest for 30 minutes in the refrigerator.
  2. Prepare the BBQ Smokehouse Magic Sauce by whisking together all ingredients in a medium saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes until slightly thickened. Set aside.
  3. Soak wood chips in water for at least 30 minutes before grilling.
  4. Preheat your grill to medium high heat (around 350°F). Drain the soaked wood chips and place them on top of hot coals or in a smoker box above one of the burners on a gas grill. Allow the chips to smoke for about 5 minutes before placing the chicken on the grill.
  5. Grill the seasoned chicken pieces over indirect heat, with the lid closed, for 20 30 minutes, turning occasionally until cooked through (internal temperature of 165°F). During the last 10 minutes of cooking, baste the chicken with the BBQ Smokehouse Magic Sauce.

Chef’s Insight

Allow the chicken to rest for a few minutes before cutting, as this will help retain its juiciness.
