  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1/4 cup unsalted butter
  • 1/4 cup all
  • purpose flour
  • 1 tsp ground Carolina Reaper chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan with non stick cooking spray.
  2. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour, chili powder, smoked paprika, salt, and pepper, forming a roux.
  4. Gradually add milk while whisking continuously, cook until thickened and smooth.
  5. Stir in the shredded cheddar cheese until fully incorporated and smooth. Remove from heat.
  6. Combine macaroni with cheese sauce in a large mixing bowl.
  7. Spoon macaroni mixture into prepared mini muffin pan, filling each cup to the top.
  8. Sprinkle breadcrumbs evenly over the top of each muffin.
  9. Bake for 20 25 minutes or until golden brown and bubbling.
  10. Let cool slightly before removing from the pan. Serve warm.
