  1. Mix the BBQ rub ingredients in a small bowl. Pat dry chicken breasts and coat evenly with the rub. Cover and refrigerate for at least 2 hours or overnight.
  2. Preheat grill to medium high heat (350°F) and soak applewood chips in water for 30 minutes.
  3. Place chips on hot coals or in a smoker box, and cook chicken breasts until cooked through, approximately 45 minutes. Baste with BBQ sauce every 10 15 minutes, turning occasionally.
  4. Remove from grill, let rest for 5 minutes, then garnish with parsley and serve with lemon wedges.
