  • 2 lbs boneless, skinless chicken breasts, cut into bite

  • purpose flour
  • 1 1/2 cups buttermilk
  • 3 cups vegetable oil for frying
  • 1/2 cup buffalo sauce (hot or mild, depending on preference)
  • 1/2 cup melted butter
  • 1 cup crumbled blue cheese
  • 1/4 cup hot sauce (optional, for extra heat)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the buttermilk with 1 cup of buffalo sauce and whisk in the melted butter.
  2. Place the chicken pieces in the buffalo sauce mixture and marinate for at least 30 minutes or up to overnight in the refrigerator.
  3. Set up a breading station: place flour in one shallow dish and remaining 1/2 cup of buffalo sauce in another.
  4. Remove chicken from the buttermilk mixture, letting excess drip off. Dredge each piece in the buffalo sauce, then dredge in the flour, shaking off excess. Place on a wire rack to rest while you heat the oil.
  5. In a deep fryer or heavy pot, heat the vegetable oil to 350°F (175°C). Fry chicken bites in batches until golden brown and cooked through, approximately 4 5 minutes per batch. Use tongs to turn them halfway through cooking for even browning.
  6. Remove fried chicken from the oil and place on a clean wire rack to drain and cool slightly. Season with salt and pepper to taste.
  7. In a large bowl, combine crumbled blue cheese with hot sauce (if using) to create a dipping sauce. Serve alongside the blazing buffalo chicken bites for an irresistible combination of flavors and textures.
