Brazilian Brigadeiros with Coconut and Nut Truffles

In a medium saucepan, combine the cocoa powder and condensed coconut milk over medium heat, stirring frequently until smooth and thickened to a pudding like consistency (5 minutes). Remove from heat.
Place chocolate covered caramel candies in a small bowl. Set aside.
Working quickly, use a melon baller or teaspoon to scoop and roll the mixture into 18 20 evenly sized balls. Place on parchment paper.
Roll each truffle in shredded coconut to coat completely. Return to parchment paper.
Insert a toothpick into each candy, then dip one by one into the melted chocolate caramels. Twist gently to remove toothpick and create a smooth surface. Return to parchment paper.
Refrigerate for 30 minutes to set before serving.
