  • 1/2 cup unsweetened shredded coconut
  • 1 egg, beaten

Instructions

  1. For the Açaí Bowl:
  2. In a blender, combine the frozen açaí puree, banana, almond milk, honey or maple syrup, mixed berries, chia seeds, and vanilla extract. Blend until smooth and creamy.
  3. Pour the mixture into a bowl and top with additional fruit, nuts, or granola for an extra crunch. For the Coconut Crusted Bacon:
  4. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  5. In a shallow dish, beat the egg. In another shallow dish, place the shredded coconut.
  6. Dip each bacon strip in the beaten egg, then coat it with the shredded coconut. Place on the prepared baking sheet and repeat for all strips.
  7. Bake for 18 20 minutes or until crispy and golden brown, turning halfway through. Allow to cool slightly before serving.
