Almond Granola:
2 cups mixed nuts (almonds, walnuts, pecans)
1 cup unsweetened shredded coconut
1/4 cup honey or maple syrup
1/4 cup coconut oil, melted
1 tsp ground cinnamon
1/2 tsp salt
Instructions
Step 1: In a blender, combine the frozen açaí puree, banana, almond milk, honey or maple syrup, and vanilla extract. Blend until smooth and creamy. Step 2: Preheat oven to 325°F (160°C). In a mixing bowl, toss the nuts, shredded coconut, honey or maple syrup, melted coconut oil, cinnamon, and salt until well coated. Spread the mixture onto a parchment lined baking sheet and bake for 20 25 minutes, stirring occasionally, until golden brown. Allow to cool before breaking into pieces. Step 3: Slice the tropical fruits and set aside. Step 4: Assemble the Açaí Bowl by pouring the blended açaí mixture into a bowl and top with granola and tropical fruits. Enjoy immediately!
