  • 1/2 cup water
  • 1 cup white rum
  • 2 cups sparkling water, chilled

Instructions

  1. In a small saucepan, combine sugar and water over medium heat, stirring until the sugar has dissolved completely. Allow to cool.
  2. In a large bowl, mix together the lime juice, cooled syrup, and white rum. Stir in the sparkling water and pour into a shallow freezer safe container.
  3. Freeze for at least 4 hours, or until set.
  4. When ready to serve, use an ice cream scoop to create round sorbet balls and place them on individual plates. Garnish with fresh mint leaves.
