Brazilian cheese rolls, also known as "Pão de Queijo," are a popular snack in Brazil. They are traditionally made with tapioca flour for a unique texture.
Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons cold unsalted butter, cubed
- 1/2 cup warm milk
- 2 cups shredded mozzarella cheese
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- 1/2 cup confectioners' sugar
Instructions
- 1
In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the warm milk to form a soft dough. Wrap and chill for 30 minutes. Preheat oven to 400°F (200°C). Roll out the dough on a lightly floured surface, cut into squares, and place them in a muffin tin. Fill each square with shredded mozzarella cheese, then bring the corners of the dough together to form a pouch. Whisk the eggs and vanilla extract together, and brush the tops of the pouches with this mixture. Bake for 20 minutes, or until golden brown. For the chocolate sauce, combine cocoa powder, heavy cream, and granulated sugar in a saucepan over low heat, whisking until smooth. Stir in confectioners' sugar to sweeten to taste.
Chef's Notes
For a stronger chocolate flavor, use Dutch-processed cocoa powder in the sauce.
