  • 1 cup unsweetened shredded coconut
  • 1/2 cup coconut oil
  • 1/4 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup erythritol or another keto
  • friendly sweetener
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened chocolate, chopped

Instructions

  1. In a food processor, pulse together 1/2 cup of shredded coconut and 1/4 cup of almond flour until well combined.
  2. In a small saucepan over low heat, melt 1/4 cup of coconut oil and add in the pulsed coconut almond mixture. Stir constantly until fully incorporated.
  3. Remove the saucepan from heat and mix in 1/4 cup of cocoa powder, 1/4 cup of keto friendly sweetener, 1/4 teaspoon of salt, and 1/2 teaspoon of vanilla extract.
  4. Stir in the 1/4 cup of chopped unsweetened chocolate until fully combined.
  5. Pour the mixture into a shallow dish and refrigerate for 30 minutes or until firm.
  6. Use a small cookie scoop to form 12 round balls from the chilled mixture and roll them in the remaining 1/2 cup of shredded coconut.
  7. Place each bliss bomb onto parchment paper lined tray and freeze for at least 3 hours or until solid.
