  • 1 can (13.5 oz) coconut milk ¼ teaspoon salt
  • 2 tablespoons lime zest

  • 1 teaspoon unflavored gelatin powder ¼ cup cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine heavy cream, granulated sugar, water, coconut milk, salt, lime zest, and lime juice. Stir to dissolve the sugar.
