  • 1 ripe mango, peeled and diced 2 cups unsweetened coconut milk 1 cup sweetened condensed milk 1 teaspoon vanilla extract 1 cup graham cracker crumbs 3 tablespoons unsalted butter, melted Optional: Whipped cream and additional mango slices for serving

  1. a. In a blender or food processor, puree the diced mango until smooth. Set aside. b. In a large bowl, whisk together the coconut milk, sweetened condensed milk, and vanilla extract until well combined. Set aside. c. In another bowl, mix together the graham cracker crumbs and melted butter until fully incorporated. d. To assemble the dessert, layer 1/4 of the mango puree at the bottom of each serving glass or bowl, followed by 1/4 of the coconut milk mixture. Repeat this process two more times to create three layers in each glass. e. Top off each serving with a generous spoonful of graham cracker crumbs and refrigerate for at least an hour or until frozen. f. When ready to serve, garnish with whipped cream and additional mango slices if desired.
