Ingredients

  • 1 cup canned full
  • fat coconut milk
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 1/4 tsp sea salt
  • Ice cubes
  • Fresh berries and mint leaves for garnish

Instructions

  1. In a small saucepan, combine coconut milk, almond milk, vanilla extract, and honey. Heat over low heat until the honey has dissolved. Remove from heat and allow to cool slightly. Divide the sea salt equally among four tall glasses. Pour the chilled milk mixture into a pitcher or measuring cup with a spout. Slowly pour the mixture into each glass over the sea salt, filling them to about two thirds full. Stir gently until the salt dissolves. Top each glass with ice cubes and garnish with fresh berries and a sprig of mint.

Chef’s Insight

The sea salt adds depth to this mocktail without overpowering its tropical flavors.

Notes

For a more elaborate presentation, serve the mocktail in coconut shell cups or hollowed-out pineapples.

Cultural or Historical Background

Tres Leches cake, a popular Latin American dessert, is traditionally soaked in three types of milk: evaporated milk, condensed milk, and heavy cream. Our Paleo adaptation uses coconut milk and almond milk for the same luxurious effect.
