  • 1 banana
  • 1/4 cup almond milk
  • 1 tablespoon honey or agave syrup (optional)
  • 1 cup rolled oats
  • 1 cup corn kernels

  • purpose flour
  • 1 cup shredded cheese (use vegan cheese for a vegan option)
  • 1 egg, beaten (use a flax egg for a vegan option)
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons baking powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the açaí bowl by blending frozen açaí berries, banana, almond milk, and sweetener (if using) in a blender until smooth and creamy. Pour into bowls and set aside. In a large mixing bowl, combine corn kernels, oats, flour, shredded cheese, beaten egg or flax egg, cilantro, baking powder, salt, and pepper. Mix well to form the dough for the fritters. Heat a non stick skillet over medium heat. Scoop small portions of the dough onto the skillet and cook until golden brown on both sides, approximately 2 3 minutes per side. Set aside. Assemble the dish by placing two or three cheesy corn fritters atop each açaí bowl. Serve immediately and enjoy!
