  • 1 lb crawfish tails, peeled and cleaned
  • 1 cup cornmeal
  • 1/2 cup all
  • purpose flour
  • 1 cup buttermilk
  • 1 tbsp Cajun seasoning
  • 1/2 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Remoulade sauce ingredients (see recipe)

Instructions

  1. a. In a large mixing bowl, combine the crawfish tails, cornmeal, flour, buttermilk, Cajun seasoning, cayenne pepper, garlic powder, salt, and pepper. Mix well until all ingredients are incorporated. b. Heat about 1 inch of vegetable oil in a deep frying pan over medium heat to 350°F (175°C). c. Carefully drop tablespoon sized portions of the crawfish mixture into the hot oil, being cautious not to overcrowd the pan. Fry until golden brown and crispy on all sides, about 4 minutes. d. Remove fritters from the oil using a slotted spoon and transfer them to a paper towel lined plate to drain any excess oil. e. Serve immediately with remoulade sauce for dipping.
