Ingredients
- 16 oz extra
- firm tofu
- 2 cups cauliflower rice (prepared)
- 2 cups creole gravy (vegan)
- 2 tbsp blackened seasoning blend
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Press the tofu for 20 minutes to remove excess water.
- Slice the tofu into 8 equal pieces and coat with blackened seasoning.
- In a non stick pan, heat olive oil over medium high heat and cook the tofu until blackened, approximately 4 minutes per side.
- Heat cauliflower rice according to package instructions or in the microwave.
- Serve the blackened tofu atop the prepared cauliflower rice, and drizzle with creole gravy.
Chef’s Insight
Use a blend of paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, white pepper, and black pepper to create the perfect blackened seasoning.
Notes
Tofu is an excellent source of plant-based protein, while cauliflower rice adds fiber and vitamins to this dish.
