Ingredients

  • 1 cup raw pecans, divided
  • 1/4 cup almond flour
  • 2 tbsp coconut oil, melted
  • 1 large egg, room temperature
  • 3/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/8 tsp cayenne pepper (optional)
  • Pinch of sea salt
  • 1 tbsp unsalted grass
  • fed butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, pulse together 2/3 cup pecans, almond flour, and coconut oil until it forms a crumbly dough. Press the mixture into the bottom and sides of six 4 inch tart pans or ramekins. Bake for 10 minutes, then set aside to cool.
  3. In a medium saucepan over low heat, combine maple syrup, cinnamon, nutmeg, allspice, cayenne pepper (if using), and a pinch of sea salt. Stir until well combined and slightly thickened. Remove from heat and whisk in the egg until fully incorporated.
  4. Coarsely chop the remaining 1/3 cup pecans. Gently stir them into the maple syrup mixture.
  5. Fill each prepared tart pan or ramekin with the pecan mixture, filling to the top. Dot the surface of each pie with a cube of cold butter.
  6. Bake for 20 25 minutes, or until the filling is set and the crust is golden brown. Allow the pies to cool completely before removing them from their pans.
  7. Garnish with additional chopped pecans and a sprinkle of cinnamon before serving. Enjoy this sensational Cajun Pecan Pie Bites experience!

Chef’s Insight

The crust will remain soft and flaky if you use cold butter instead of melted coconut oil.

Notes

For a spicier version, increase the cayenne pepper to taste.

Cultural or Historical Background
