Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened, about 3 4 minutes.
  2. Stir in the Cajun seasoning, and cook for an additional minute.
  3. Add the diced bell peppers to the skillet and cook for 5 minutes or until they begin to soften.
  4. Stir in the cauliflower rice and cherry tomatoes, cooking for about 8 10 minutes or until the cauliflower is tender and the tomatoes have released their juices. Season with salt and black pepper to taste.
  5. In a separate pan, cook the shrimp over medium heat for 2 3 minutes per side, or until they turn pink and are cooked through.
  6. Divide the cauliflower rice mixture among two bowls, top each bowl with half of the cooked shrimp, and garnish with fresh parsley.
