Instructions
Begin by preparing the caramelized pineapple. In a non stick pan, heat sugar and a splash of water until it forms a golden syrup. Add the pineapple slices and cook until caramelized and tender. Set aside to cool.
In a cocktail shaker, combine cachaça, lime juice, and coconut milk. Shake vigorously with ice.
Fill two glasses with crushed ice and pour the cachaça mixture over the ice.
Top each glass with a caramelized pineapple slice and serve immediately.
