  • 1 1/2 cups heavy cream 1 can (13.5 oz) coconut milk 1/2 cup granulated sugar 1 1/2 tsp vanilla extract 1 1/4 tsp unflavored gelatin powder 1/4 cup cold water Toasted coconut flakes, for garnish

Instructions

  1. In a medium saucepan, combine the heavy cream, coconut milk, and sugar. Heat over low heat, stirring occasionally until the sugar dissolves. Remove from heat and let cool to room temperature.
  2. In a small bowl, sprinkle gelatin evenly over the cold water. Let sit for 5 minutes until softened. Then, stir the gelatin into the cream mixture until fully dissolved. Add vanilla extract and whisk well.
  3. Strain the mixture through a fine mesh sieve into a large measuring cup or pitcher. Divide the mixture evenly among two ramekins or dessert glasses, and refrigerate for at least 4 hours or overnight until set.
  4. When ready to serve, garnish with toasted coconut flakes. Enjoy the tropical island escape with every bite!
