  • fat coconut milk, chilled overnight
  • 2 ripe avocados, pitted and peeled
  • 1/2 cup raw cashews, soaked for 2 hours in hot water
  • 1/2 cup lime juice, freshly squeezed
  • 1/3 cup agave nectar or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 fresh pineapples, peeled and hollowed out
  • 4 sprigs of fresh mint, for garnish
  • 2 lime slices, for garnish

Instructions

  1. Begin by soaking the cashews in hot water for 2 hours. Drain and rinse thoroughly.
  2. In a high speed blender or food processor, combine coconut milk, avocados, soaked cashews, lime juice, agave nectar, vanilla extract, and salt. Blend until creamy and smooth.
  3. Chill the mixture in the freezer for 30 minutes to firm up slightly. Remove from the freezer and blend again to achieve a soft serve consistency.
  4. Carefully scoop the frozen dream into the hollowed out pineapples, filling each to the brim. e) Garnish with fresh mint sprigs and lime slices, then serve immediately.
