4 large eggs (omittable) 1/2 cup diced ham 1/2 cup chopped bell peppers (red, green, and yellow) 1/4 cup chopped onions 1/4 cup black beans, rinsed and drained 1/4 cup diced tomatoes 1/4 cup shredded cheddar cheese 1 tbsp chopped cilantro 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp ground turmeric Salt and black pepper, to taste 2 tbsp coconut oil or olive oil for cooking
Instructions
In a medium bowl, whisk together the eggs, garlic powder, onion powder, turmeric, salt, and black pepper. Set aside.
Heat 1 tablespoon of oil in a large non stick skillet over medium heat. Add diced ham and cook for 3 4 minutes until browned.
Add chopped bell peppers, onions, and sauté for 5 minutes, or until the vegetables are tender.
Stir in the black beans, tomatoes, and whisked eggs. Cook, stirring occasionally, for 5 7 minutes or until the eggs are set and cooked through.
Remove from heat and fold in the shredded cheddar cheese and chopped cilantro.
Serve immediately, garnishing with additional cilantro if desired.
