Ingredients
- 1 cup fresh pineapple, cut into 1
- inch chunks 1 cup fresh mango, cut into 1
- inch chunks 1 cup fresh strawberries, hulled and halved 1 cup fresh kiwi, peeled and sliced 2 tbsp brown sugar 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground nutmeg 1 cup heavy cream 1 can (13.5 oz) coconut milk, refrigerated overnight and cream separated Zest of 1 lime Juice of 1 lime 2 tbsp honey
Instructions
- In a small saucepan, combine the brown sugar, cinnamon, ginger, and nutmeg with 1/4 cup water over medium heat. Stir until the sugar has dissolved, creating a syrup. Remove from heat and let cool.
- In a large bowl, whip together the heavy cream, lime zest and juice until soft peaks form.
- In another large bowl, gently fold the separated coconut cream into the whipped cream mixture. Add honey to taste and mix well. Refrigerate until ready to serve.
- Thread fruit chunks onto skewers, alternating between pineapple, mango, strawberries, and kiwi. Brush with the cooled spiced syrup for an extra burst of flavor.
- To plate, drizzle each set of skewers with a generous portion of lime coconut cream. Serve immediately.
